ORANGE BERRY WAFFLES
Ingredients
- 85g (3oz) Wholemeal flour
- 35g (1 1⁄2 oz) Wheat bran
- 2 tbsp Sugar substitute
- 1⁄4 tsp Cinnamon
- Pinch salt
- 275ml Skimmed milk
- 2 medium Eggs, whisked
- 1 tsp Vanilla
- 3 Egg whites, whisked
- Orange Berry Compote
- 2 Oranges, peeled
- 225g (8oz) Sliced strawberries, fresh or frozen
- 225g (8oz) Fresh or frozen blueberries
- 3 tbsp Water
- 3 tbsp Sugar substitute or to taste
- 2 tbsp Corn flour
Instructions
- Make the Orange Berry Compote: Chop the oranges, reserving juices and place in saucepan. Add the strawberries, blueberries, water, sugar substitute and cornflour and bring to the boil, stirring occasionally. Cook for minute or until thickened and remove from heat.
- In a bowl, whisk together the flour, bran, sugar substitute, cinnamon and salt; set aside. In another bowl, whisk together the milk, egg and vanilla. Pour over the flour mixture and whisk until combined.
- In another bowl, beat the egg whites until stiff peaks form. Fold into the batter.
- Heat a waffle iron. Spray lightly with cooking spray and pour in about 8 tbsp of the batter. Close lid and cook for about 4 minutes or until the steam stops and waffle is golden. Serve with sauce. Repeat until all the batter is used.
Notes
storage: Waffles can be wrapped individually and frozen for up to 1 month. Reheat in the microwave or, tor a crisper waffle, in a toaster. Orange Berry Compote can be refrigerated for up to 2 days and reheated over a low heat or in the microwave.
